Kitchen Confidence: Rainbow Pasta Salad

Adam Wisnewski from Breakfast, Life and Dinner stops by the Morning Show for this week’s Kitchen Confidence and is showing us how to make your perfect noodle.

Rainbow Pasta Salad – Perfect Noodles

Ingredients

12oz Bow tie noodles cooked to (your!) perfection

4 Zucchini, seared and chopped

4 Roma tomato, chopped

Yellow Bell Pepper, chopped fine

Red onion, minced

Carrot, shredded or spiralized

Black olives

Ham or Salami or Imitation Crab Meat or Crushed Chickpeas

Dressing:

1 cup Hummus

1/2 cup Mayo

1/4 cup spicy brown Mustard

Instructions

Cook noodles in large amount of salted water to taste

Mix ingredients

Prep ’em!

Chop ingredients, as necessary

Boil 8 quarts water for 12 oz dried pasta in lidded pot

Cook ’em!

Pan sear zucchini in quartered/spears, chop

Add 2 TBS salt to boiling water, stir well (no oil)

Add pasta to pot, stir well

Add lid to pot, bring back to full boil, remove lid

Stir pasta at least twice more during cooking

For dried pasta, begin checking at 9 minutes (check every minute after)

Drain pasta, keep pasta water

Do not rinse pasta

Mix all ingredients in large bowl

Serve ’em!

Serve warm!

Or served lightly chilled the next day
