So setting healthy goals for yourself can be crucial. Beth Peralta from the U of I Extension joins us for Healthy Living.
Overnight Blueberry Oats
¼ cup steel cut oats
¼ cup quick oats
½ cup 1% milk
½ cup plain Greek yogurt
½ cup frozen unsweetened blueberries
½ tsp. vanilla extract
- Put all ingredients in a reusable container (such as a mason jar or glass bowl with a lid) and mix together.
- Store in the refrigerator overnight for eating at breakfast the next day.
Southwestern Salad Mason Jar Lunches
Makes 4-5 lunches
Ingredients
1 lb. ground beef, lean
|
½ cup onion, chopped
|
1 Tbsp. chili powder
|
2 tsp. dry oregano
|
½ tsp. cumin
|
1 cup canned kidney beans, drained
|
1 can (15 ounces) chickpeas (garbanzo beans), drained
|
1 cup grape tomatoes
|
2-3 cups lettuce, shredded or broken into bite-sized pieces
|
½ cup cheddar cheese, low-fat, shredded
|
4 Tbsp. ranch dressing, low-fat
|
- Brown ground beef and onion together in a medium skillet, add chili powder, oregano, and cumin.

Make a layered salad in a mason jar using this order.
- Bottom to Top: Ranch àTomatoes à Beans à Meat à Cheese à Lettuce
- Store mason jars in refrigerator.
- Bring an extra bowl, if desired, for eating at meal time.
