White Bean Chicken Chili
Makes approx. 6 1-cup servings
1 tbsp olive oil or canola oil
1 large white onion, diced
2 cloves garlic, finely diced
8 oz low sodium chicken broth
15 oz can low sodium diced tomatoes
7 oz can diced green chiles
½ cup salsa verde
½ tsp dried oregano
½ tsp ground coriander
¼ tsp ground cumin
1 lb cooked, chopped chicken breast
15 oz can low sodium white beans, drained
Ground black pepper, to taste
1. Heat oil in large pot and cook onions and garlic until tender.
2. Stir in broth, tomatoes, chiles, salsa verde, and spices. Bring to a boil, then simmer for 10 minutes.
3. Add chicken and beans; simmer for 5 minutes. Season with pepper to taste.
