We’ve got a healthier take on a chocolate treat in today’s Food Facts. Laura Jacob shows us how we can trim the calories on a chocolate mug cake.
This is a delicious, quick recipe. Big chocolate flavor; much lower in calories, fat, and carbs than most other mug cake recipes out there. Other mug cake recipes are between 500 and 800 calories. The great thing about mug cakes is they are “one and done”. You get your chocolate fix, without leftovers to tempt you.
Lighter Chocolate Mug Cake
1 tsp ground flaxseed
3 tsp water
1 tbsp cocoa powder
1 tbsp sugar
1 ½ tsp canola oil
1/8 tsp vanilla
2 tsp skim or 1% milk
2 tbsp all-purpose flour
1/8 tsp baking powder
In a very small, high-sided dish, stir together the water and ground flaxseed. Set aside.
In a small bowl, stir together the cocoa powder, sugar, canola oil, vanilla, and milk until well-blended. Stir in the flaxseed and water mixture.
Using a fine-mesh strainer, sift the flour and baking powder into the chocolate mixture, and stir until well-blended.
Plate the batter into a 6-8 oz mug, scraping the bowl. Tap the mug to settle the batter and break any large bubbles.
Microwave the mug of batter on high for 45 seconds. Remove from microwave and let cool for about 2 minutes. Then, enjoy!
