Fried Sweet Potatoes with Lime Cilantro Dressing
Sweet potatoes are a very healthy carb. Some people still have visions of them from family holiday meals, laced with brown sugar and marshmallow or in the form of sweet potato fries. Here’s a different spin on them, one that provides a delicious and healthy option for your meals.
Here’s what you’ll need:
2 pounds sweet potatoes
1 large yellow onion (optional)
3-4 Tbsp olive oil
Kosher salt, pepper, and garlic
1/4 cup finely chopped fresh cilantro (including tender stems)
1 teaspoon of lime zest or lemon zest
2 tablespoons of fresh lime or lemon juice
1/4 cup olive oil
Pinch of salt
Start by making the lime cilantro dressing. Lemon may be substituted instead of lime. You may buy pre-chopped fresh cilantro or buy fresh to chop. In a small bowl, mix the cilantro, lime juice, zest, olive oil and salt. Set aside.
Next, slicing your sweet potatoes to desired thickness, at least ¼ or less. I use a mandolin, which makes the job much easier. Next slice your onion; I generally slice them ¼ in, as they are easier to cook.
You have option with how to cook the potatoes and onions. I loved to grill them on foil or cast iron. You may also cook them inside, using a large Dutch oven or an electric skillet. On your cooking surface, place olive oil and seasonings. After the oil and seasons become fragrant, add potatoes and onion. Drizzle top of
potatoes and onion with additional oil and seasoning. Fry mixture until the potatoes have browned and the onions have caramelized.
Remove potato mixture from cooking surface and place in a serving dish, toss with dressing until covered.
This dish is a wonderful and healthy side with just about any form of protein. I especially enjoy salmon and the potatoes for a meal. The dressing is not required, as the potatoes and onions are fantastic by themselves. These are great to serve to company, as many people have never had this health conscious version of a fried sweet potato.
