Food Facts: Baked Blueberry Oatmeal

Laura Jacob from Christie Clinic joins the Morning Show and in this week’s Food Facts she is making a baked blueberry oatmeal.

Blueberry Baked Oatmeal- Makes 4 servings

1 ½ cups old fashioned rolled oats
1 tbsp ground flaxseed or flaxseed/chia blend
2 tsp ground cinnamon
2 tbsp 100% maple syrup
2 eggs
1 cup skim milk (or may use any low fat non-dairy milk you prefer)
1 cup water
½ cup blueberries (may use frozen (thawed and rinsed) or fresh)

Preheat oven to 375 F. Spray 2 qt casserole dish with non-stick cooking spray or grease lightly with soft tub margarine. In a large bowl, combine eggs, milk, water, and maple syrup and beat with a fork. Add the oats. Sprinkle the flaxseed and cinnamon over the top, and mix. Stir in blueberries. Pour mixture into casserole dish. Bake in preheated oven for 30-35 minutes or until liquid is absorbed. Cool slightly and serve, or refrigerate for breakfast the next day. Eat the oatmeal cold or reheat in microwave.
