Avocado Tomato Salad
Simple. Summer. Salad. Three words that go together so well. This quick and easy salad is a crowd please for all occasions, a truly wonderful side dish at any meal.
For this recipe, you’ll need:
2 avocadoes
3 cups grape tomatoes
1 small can shoepeg corn
4 slices of cooked bacon, crumbled
Skin and remove the core of the avocado, cutting it into medium sized pieces. Cut tomatoes in half. In a large bowl, mix avocado and tomatoes. Add undrained can of corn and mix well with avocado and tomatoes. Top each serving with crumbled bacon bits.
Avocadoes and grape tomatoes have become a staple in our household, making this a great spontaneous salad to make. We even have precooked bacon on hand, as well as a few can of the shoepeg corn. I would say this is great the next day, but it never seems to make it past the first meal at our house.
