Food Facts: Apple Slaw

Laura Jacob, registered dietitan with Christie Clinic, joins the Morning Show and in this week’s Food Facts we are making a zesty apple slaw.

Ingredients:

3 cups finely shredded green cabbage
1 unpeeled red apple, cored and halved, and cut in thin strips
1 unpeeled Granny Smith apple, cored and halved, and cut in thin strips
1 carrot, shredded
½ cup chopped red bell pepper
2 green onions, finely chopped
1/3 cup light mayo
2 tbsp brown sugar
1 tablespoon lemon juice

In a large bowl, combine the apples and vegetables. In a small bowl, mix together the mayo, brown sugar, and lemon juice. Pour the mixture over the salad and stir. Serve cold.
