3 Minute Grill: Cornish Hens

Toaster Oven Cornish Hen


Small kitchen? Tiny budget? Thanksgiving for two? Make a roasted bird in your littlest oven.
1 cornish hen for 2 people
1 small baking potato
2 carrots
1-2 stalks of celery
1 small white onion
2 TBS butter, divided
Olive oil
¼ lemon
3 cloves garlic
1 cup chicken broth
Rosemary, Thyme, Salt and Pepper
  • Preheat toaster oven to 450F
  • Make a ramekin of seasoning – ½ TBS salt, 1 tsp rosemary, 1tsp thyme, good number of grinds of fresh pepper
  • Pat bird dry, inside and out. Rub bird very lightly, inside and out, with olive oil
  • Loosen skin above each breast and slip 1TBS pat of butter and a bit of seasoning mix under the skin
  • Rub a bit of seasoning mix into cavity. Place lemon quarter and garlic cloves into cavity
  • Sprinkle remaining seasoning mix over bird
  • Place chopped vegetables into roasting dish, place bird, breast side down in veggies
  • Roast veggies and bird for 25 min
  • Reduce heat to 350, pour chicken broth over bird and bake another 30 minutes, basting every 10 min (spoon some broth over the top of the hen)
  • Meat is done when thigh temperature is 165F
