Burger Basics and Mix-in Magic

Mix-in burgers are soooo much easier than stuffed versions. And, everyone can make their own version of the perfect burger. You can make a classic hamburger, a “meatloaf” style burger, or even a vegan version!
80/20 chuck (70/30, if you can get it)
Try these mix in combinations:
* Mozarella cheese, marinara sauce and pepperoni
* Green peppers, black olives, Feta cheese, oregano, lemon juice
* Pico de gallo, green onions, black olives, Cotija cheese
* Smoked gouda, bacon, sun dried tomatoes
* Sweet pickle, crab meat, green onion, mayo, hot sauce
* Soy sauce, peanut butter, garlic and lime juice with grilled pineapple
* Cilantro, chopped peppers, onions and tomatoes.
* BBQ sauce, pepper jack cheese, avocado cubes
General: Make about an inch wider than the bun, ½ inch thick (¾ max), indent the middle with your finger (almost a hole), medium heat (you can hold your hand 4 inches above the coals for 4 seconds), cook 4-6 min per side, use a thermometer (160F), cheese topping only needs 2 min (don’t add as soon as you flip)
Lighter, classic hamburger:
Don’t overwork (use wet hands to make lightly packed patties), no seasonings other than salt and pepper, don’t season until on the grill, don’t flatten with the spatula while cooking, use a bakery roll instead of a national brand bun
Add egg, bread crumbs, evaporated milk, worcestershire sauce, salt and let sit for an hour in the ‘fridge, use brioche style loaf bread
