2 pounds catfish filets cut into 2 inch pieces
12 oz American Lager beer
2 cups all-purpose flour
¾ t baking powder
Salt & Pepper to taste
(You can experiment with other spices such as Cajun seasonings, curry or turmeric)
Combine beer, egg, flour and baking powder in a bowl and whisk until well blended. If the batter seems to thick, add a little more beer; if too thin a little more flour. Salt and pepper to taste.
Heat a Dutch oven or deep frying pan with ½ inch of frying oil. When the oil is shimmering, about 375 degrees, add a little bit of the batter to the oil. If it starts sizzling the oil is ready. Batter your fish and carefully add to the oil. Add a few pieces at a time since over crowding the pan will not cook the fish properly and the finished product will be oily. Fry on one side 3-5 minutes or until brown, then flip to the other side and finish frying until golden brown. Remove fish to a paper towel lined plate. Continue until all fish is fried.
Homemade Tartar Sauce:
1 cup mayonnaise
1 T sweet relish
1 T minced onion
2 T lemon juice
1 T capers
½ t hot sauce or more to your liking
Salt and Pepper to taste
In a small bowl, mix all ingredients except salt and pepper. Once mixed salt and pepper to taste. Let set for at least one hour before serving.
