ASSUMPTION, Ill. (WCIA) — A brewery is working on reopening after a fire tore through it earlier this year.
1905 Brewing Company caught fire in February.
WCIA got a behind-the-scenes look at how the new building is coming along so far.
1905 Brewing company became a big name in just the short period of time it was originally open. That’s why the fire was devastating.
The same day that happened, customers asked what they could do to help, and if the owners would rebuild.
The owners didn’t have an answer right away, but they never lost the passion for making beer.
Tom Dooley made it in his own garage. “We didn’t want to quit on our recipes…so we just started going through the list and doing pilot batches at home,” he said. “I’m making sure that they taste as good as they did before…and so far so good.”
There came a point when the owners’ empty glass perspective was filled with an outpouring of support.
“It was the customers that made us really want to come back,” said Dooley.
Dooley showed us around the new space, with a tour of where all of the equipment will be set up. That includes a place for a stain glass window with the company’s logo.
It’s similar to what was mounted on the old building.
The owners weren’t always sure they’d rebuild, but now they’re moving full steam ahead.
“It was a labor of love, and it was heartbreaking to go through that fire, but we came out of it better. I think we’re going to name a beer “The Phoenix.”” said Dooley.
They’re targeting an opening date in May 2020. The new location is at 121 North Chestnut.
