“Pixar at the Movies” at the Spice Box

The Spice Box is operated by two groups of students each year. One group is all seniors and the other group is made up of freshmen and some sophomores. For our last Spice Box meal, we are giving the freshmen/sophomore students a chance to host their own meal as a group project. So, on Friday 4/26, the freshmen will be running the show and my seniors will be waiting tables and performing support roles in the kitchen.

The meal theme chosen by the FSHN 145 class is called “Pixar At The Movies!”; and features a menu inspired by some of their favorite Pixar films.

The recipe they are bringing is for Pizza Planet Fire Roasted Tomato Dipping Sauce. It is a tomato based spread that is served as part of the bread service at the beginning of the meal. 

Recipe
Yield: 16 ounces
Ingredients:
3 and 1/2 ounces Roasted Almonds
15 ounces  Canned Crushed Fire Roasted Tomatoes
1 clove   Garlic
1 ounce  Lemon Juice
1/2 tsp   Kosher Salt
1/2 tsp   Black Pepper
2 ounces  75/25 Oil (Canola/Olive Oil)
Combine the almonds, tomatoes, garlic, lemon juice, kosher salt, and black pepper in the food processor.
Process until the nuts are finely ground.
With the processor running, add the oil in a steady stream until a thick texture forms
Portion into a serving dish
Serve with grilled/toasted bread

Appetizer: Mushrooms a la Remy* Roasted mushroom caps filled with gruyere and fresh rosemary. Inspired by Pixar’s Ratatouille.

Salad: The S.C.R.E.A.M. Salad* Sunflower kernels, Croutons, Red onion, English cucumber, and Montchevre goat cheese. Served with a Roz-berry and Boo-berry vinaigrette! Inspired by Pixar’s Monsters Inc.

Entree: Shark Bait Hoo Ha Ha A pan seared cod fillet served on a bed of whipped potatoes and cauliflower with a homemade beurre blanc sauce.Inspired by Pixar’s Finding Nemo.

Dessert: Edna (a la) Mode* A dessert fabulous enough to impress Edna herself. A homemade date cake drizzled with a brandy caramel sauce and served with vanilla bean ice cream. Inspired by Pixar’s The Incredibles.

The Hudson Hornet* Bermuda black rum, triple sec, ginger beer, and a slice of lime. Inspired by Pixar’s Cars. $5.00

DESSERT À LA CARTE
