Kristina Adams, director of Weight Managament and Wellness at Sarah Bush Lincoln is back in the CI Kitchen with a dish perfect now that the kids are back to school.
Sarah Bush Lincoln Weight Management program offers multiple options for helping you lose weight. The cooking demonstrations are held in the Center for Healthy Living and incorporate healthy foods, healthy cooking techniques and simple, inexpensive recipes. Attendees also get to taste all of the recipes demonstrated!

A good meal or snack should be a balance of nutrients from protein, carbs, good fats, vitamins/minerals or other nutrients – less from sugar and unhealthy fats.
• get kids involved – mixing, stirring, measuring, chopping (supervised)
• stay natural with ingredients, try not to get too many processed foods
(whole fruit/vegetables, all natural juice, water, regular milk, whole grain, baked)
• make it fun – try different types of breads, different shapes or even different fillings for sandwiches; include different dips and foods to dunk
• choose fun containers to pack foods in that are insulated and a thermos that is insulated as well; reusable containers
Chicken and Spinach Pasta
Makes: 4 servings
1/4 c. oil-packed sun dried tomato halves
2-1/2 c. hot cooked bow tie pasta
1 c. precooked , chopped chicken breast
1/2 c. light Italian dressing
1/4 cup or more shredded Parmesan cheese
1-10 oz pkg. fresh leaf spinach
Drain tomatoes in colander over bowl, reserving 1 T. of the oil. Combine tomatoes, dressing and pasta. Add rest of ingredients and toss well. Serve
