Stove Top Goat Cheese Mac and Cheese
2 cups macaroni noodles
6 tablespoons unsalted butter
6 tablespoons all-purpose flour
2 cups whole milk
1 cup heavy cream
12 ounces goat cheese
4 ounces freshly grated pecorino romano cheese
1/4 teaspoon white pepper
1/8 teaspoon garlic powder
Bring a pot of salted water to a boil and cook the shells according to their directions.
Heat a large pot over medium heat and add butter. Once sizzling, whisk in the flour to create a roux. Cook for 2 to 3 minutes, until slightly golden and fragrant. Very slowly stream in the milk and the cream while whisking the entire time. Cook for 5 to 6 minutes, stirring, until slightly thickened. Reduce the heat to low and add the goat cheese in 2 batches, stirring after each addition. Since it’s a little thicker, it will take longer to melt so continue to stir for 5 minutes or so after each addition.
Stir in the pecorino cheese and continue to stir until melted. Stir in the white pepper and garlic power. Taste and season additionally is desired
Apple, Bacon and Cheddar Grilled Cheese
1 tsp. olive oil
1 lg. red onion, cut in half and sliced thin
Sea Salt (to taste)
freshly cracked pepper (to taste)
1 tsp honey
6-8 strips thick cut bacon
1 c. sharp cheddar, grated
1 honey crisp apple
4 slices of good bread
Preheat oven to 400 degrees F. Over medium heat in a medium to large saute pan, heat one teaspoon olive oil until shimmering. Add onions and a few pinches of Sea Salt and cook for 10 minutes, stirring occasionally.
Meanwhile place bacon on rimmed baking sheet and bake in oven for 15-20 minutes, until bacon is crisp. Place bacon on paper towel lined plate and let the towel absorb the grease.
After red onions have cooked 10 minutes add honey and a few pinches of freshly cracked black pepper. Continue to cook until transparent, golden and caramelized.
Heat griddle to 350 degrees. While onions and bacon are finishing, shred cheese and apples. Chop bacon. Add finished onions, bacon, grated cheese and apples in medium bowl and stir until evenly combined.
Once griddle is preheated, dress one side of each slice of bread with butter. Place bread on griddle and place a heaping 1 cup of mixture on bread. Top with second slice of buttered bread. Cook each side for approximately 4 minutes or until crispy and golden on outside. Repeat to make other sandwich. Slice in half and serve!
