3/4 cup butter
1/2 cup sugar
1/2 teaspoon lemon zest
1/2 teaspoon cinnamon
1 egg yolk
1 teaspoon vanilla extract
1 cup flour
3/4 cup almond flour
1/4 teaspoon salt
Beat butter, sugar, and zest in a mixing bowl.
Add in yolk and vanilla; beat until combined
Whisk together flours, salt, cinnamon; add to creamed mixture and mix until combined
Roll out dough, cut into desired shape. Then, cut a whole in the middle of the cookie.
Bake at 300 degrees for 10 minutes or until light brown around the edges.
Smear a small amount of jam on one cookie. Dust cookie with hole in it with donut sugar and place on top of jam making a sandwich.
Yields 12 cookies.
