From the ribs to the pulled pork to the Polish sausage, everything that comes out of Marvin Lacy’s kitchen is food that tells the story of his life. Born in Texas, Lacy says that barbeque has been a part of his life for as long as he can remember. It is the reason he and his wife Beverly love bringing a true taste of barbeque to Urbana.
Lacy, a former college basketball player and engineer, has been exposed to BBQ all across the country. While playing basketball at Wichita State, he had a chance to learn the techniques of true Kansas City BBQ from many of those who knew it best.
“I worked with some of the better institutions during my stay at Wichita State. Gates BBQ, Bryant’s BBQ, Sammy’s BBQ, these are institutions still producing some of the best BBQ in the country.” Says Lacy.
When the Lacy’s moved to Champaign-Urbana, they brought the knowledge they had acquired in Kansas back with them. By taking the best techniques of many legendary restaurants and making them his own, Lacy has been able to create something that is all his own.
When The Lacy’s opened their restaurant in 2015, Marvin Lacy drew upon his engineering experience to design his own smoker. It helps him achieve the exact quality he wants when it comes to his smoked meats.
“We can cook several meats on there simultaneously. We can cook chicken, pork butts, pork shoulders, spare ribs, baby back ribs.” Says Lacy.
