The cooking demonstrations are held in the Center for Healthy Living and incorporate healthy foods, healthy cooking techniques and simple, inexpensive recipes. Attendees also get to taste all of the recipes demonstrated!

Healthy Holiday Recipe Substitutions
Making just a few simple changes can make your holiday traditions much healthier this year!
• Reducing sugar and fat by 1/3 in most recipes can cut out calories
o Spices, dried fruit or sugar sub
o Pureed fruits for oil, evaporated skim milk, nonstick pan sprays, broth
• Omitting or reducing salt by ½ in most recipes
o Spices and herbs
o Exception yeast bread products
• Increase fiber in most recipes by adding more whole grain, fruit and vegetable options
o Whole wheat flour, bran cereals and oatmeal can replace up to ¼-1/2 of all-purpose flour
o When reducing fat and sugar, increase or add fruits and vegetables by same amount
Veggie Spinach Dip
(Traditional spinach dip recipe substitutions – replace mayo, sour cream and bread with lower fat and CHO ingredients)
1 package (10 oz) frozen Spinach, thawed and drained
1 small can Sliced Water Chestnut, drained
½ cup, shredded carrots
1 packet Hidden Valley Original Ranch Salad Dressing & Seasoning Mix
1/ 2 cup plain lowfat Greek yogurt
½ cup Light Sour Cream
¼ cup thinly sliced green onions
1 small jar Pimentos, drained
In a small bowl mix the sour cream, greek yogurt and ranch dip mix until well blended. In a separate bowl combine all the vegetables and then add in the dip mix and gently stir to combine. Cover and refrigerate until ready to serve. Use assorted cut vegetables or whole grain crackers for dipping.
