Lisa’s Chili


1 lb. lean grounded hamburger browned and drained

1 lb. grounded turkey browned and drained

1 or 2 30 oz cans of Brooks chii beans not drained,.I prefer Hot- they are not really hot

1 46 oz can of V8 juice

2 30 oz cans of crushed tomatoes

1 large onion minced

1 small jar mild salsa

1 container or 2 cups of pico de gallo

2 T. sugar

1 T. granulated garlic

1 T. granulated onion

1 tsp crushed red pepper flakes (more to taste)

2-3 T. chili powder (more to taste)



While you are browning your meats, and then drain and set aside…

Combine all the rest of your ingredients , except the meats and beans, into a large stock pot…..

Simmer these for about 45 mins to reduce the juice into a thicker stew style base.

When this is reduced, add drained meats and beans(not drained)..

Heat and serve.

This is your chili. Make it you. Add green peppers, add different peppers, Add different onions. Add whole tomatoes. Add different spies. Add a dash or 2 of Worcestershire sauce. A dash of A-1. Add cubed steak instead of hamburger. Add all turkey. World is the limit.

Serve with onion, shredded cheese, sour cream, over corn bread, with crackers, over chips, nachos, over spaghetti, macaroni noodles, over a burger or whatever you would like.

Chipotle Chili Cornbread Bake


1 medium green pepper

6 green onions with tops divided

1 lb. lean ground beef

1 16 oz. can chili beans in sauce undrained

1 cup chunky salsa

2 tbsp Chipot6le rub (chili lime rub and smoked paprika) **

1 pkg corn muffin mix **

1 8 oz sour cream

1 egg

1 cup shredded cheddar cheese

1 chopped tomato, seeded

Sliced tops from green onion for garnish


Coarsely chop bell pepper. Thinly slice green onions separating white and green bottoms from the tops. Remove 1 Tbsp of the green tops for garnish later. Set aside remainder onions in a batter bowl.

In a covered deep dish casserole baker, combined bell pepper, onion bottoms, and ground beef. Mix well. Microwave covered on HIGH 7-9 minutes. You may also sauté this mixture on the cook top in a skillet until no longer pink and breaking up into crumbles. Remove baker from microwave or skillet pan from stove top and drain off juices carefully. Add beans, salsa, and rub or spices. Mix well. Cover and microwave an additional 5 mins on high or in skillet until hot.

Meanwhile, combine muffin mix **, sour cream and egg i8n batter owl. Mix well. Scoop muffin mixture evenly over chili. Microwave, covered on HIGH 7-9 minutes until center of cornbread springs back when lightly pressed. (I placed in oven at 350° for 20-25 mins) Sprinkle cheese over cornbread cover and let stand 5 mins or you may put back in oven uncovered til cheese is melted and slightly browned.

Garnish with reserved onion tops and chopped tomatoes.


If desired: 1 TBSP finely chopped chipotle peppers in adobo sauce can be substituted for the Chipotle Rub.

****I had neither so I used chili Lime powder and smoked paprika powder

For homemade cornbread, omit corn muffin mix. Combine ¾ cup flour, ½ yellow cornmeal, 3 tbsp sugar, 2 tbsp veg oil, 2 tsp baking powder and ¼ tsp salt. Proceed as directed in step 3, microwaving on HIGH 9-11 minutes.

**** I forgot my muffin mix so I went to CVS near the studio, and they did not have a muffin mix. No cornmeal either. So I “Tweaked it…” . I used one sleeve of Ritz crackers , a half of box of Triscuits and 2 tsp. of baking soda as my leavening agent. I also used 16 oz of sour cream instead of 8 oz. I mixed all this plus the one egg and spread it on the top. When it finished baking, I sprinkled the cheese on top to melt and brown. They LOVED it.
