Chocolate Hazelnut Fritters
Makes: 17 fritters
Ingredients:
9.1 oz all-purpose flour
2oz sugar
Pinch of salt
Zest of 2 lemons
½ cup olive oil
¼ of white wine
2.5 oz chopped bittersweet chocolate
1/3 cup hazelnuts, chopped and toasted
½ cup apricot jam
1 egg
Directions:
Mix together salt, sugar, lemon zest, olive oil, and wine and gradually mix in the flour. Kneed for about 5 minutes, or until firm but tender. Wrap the dough and let rest for about 30 minutes
Combine chocolate, nuts and jam and mix well with a spoon. Cover and set aside
Form 1 oz balls of dough then press out using the tortilla press
Place filling in the middle of the dough circles, moisten the edges with beaten egg, and fold each round in half, pressing the edges together with your fingers to seal
Be careful not to over fill fritters
Fry at 350 until golden brown
