Rowan McGuire with the Bevier Cafe is back with a tasty pasta salad dish on the menu.
SOUTHWESTERN PASTA SALAD
Serving size half cup
penne pasta 2 1/2 lbs
black canned beans 1 lbs
green bell pepper 8 ounces
diced tomato 20 ounces
sour cream 2 cups
red onion 8 ounces
cumin, ground spice 2 tablespoons
chili powder spice 2 tablespoons
cheddar shredded cheese 8 ounces
tabasco sauce to taste
Ranch Dressing 2 cups
Bring Water to boil in trunion. Add Salt
Cook Pasta in boliing until al dente (approx 12 min)
Drain pasta and rinse with cold water. Spread cooked pasta on sheet pan and cool completely in walk in cooler.
In large bowl combine cooled Pasta with all other ingredients.
Portion into clear 9oz cups w/ flat lid.
Garnish top of salad with additional fresh chopped parsley
