Blackberry Cobbler in the CI Kitchen


A fresh summer fruit is the star of a sweet dish our kid chefs are whipping up this afternoon!

Blackberry Cobbler

1 stick of butter
1 1/4 cups plus 2 table spoons of sugar 
1 cup self-rising flour
1 cup of milk 2 cups fresh (or frozen) blackberries.
You can also use blueberries, peaches or raspberries

Preheat the oven to 350. Grease a 3-quart baking dish with butter. 
Place a stick of butter in a bowl and melt.
In a separate medium bowl, whisk 1 cup of the sugar with the flour and milk.
Whisk in the melted butter.
Rinse the blackberries and pat them dry.
Pour batter into baking dish. Sprinkle berries evenly over batter.
Sprinkle 1/4 of sugar over the blackberries.
Bake for 1 hour, or until golden brown and bubbly.
When there is 10 minutes left of baking sprinkle the remaining 2 tablespoons of sugar over the top.
