ciKitchen: Healthy and Fresh Cake Recipe

Sarah Bush Lincoln Weight Management program not only offers a weight loss program to help patients with their weight loss journey, but they also offer cooking demonstrations to help patients work on lifestyle changes to better help them in keeping off lost weight. We offer monthly cooking demonstrations in the Center for Healthy Living that incorporate healthy foods, healthy cooking techniques and simple, inexpensive recipes, Attendees also get to taste all of the recipes demonstrated!

* choosing box cake mixes can be healthy option by reading labels carefully for hidden ingredients
*using whole fruit or a fruit spread instead of icing can be a healthy option with less sugar and fat

Healthified Box cake mix

Pillsbury moist supreme white or yellow cake mix

½ cup liquid egg whites

½ cup greek yogurt

1 cup water

2 ripe bananas mashed

¼ cup dried cranberries

Preheat 350 degrees. Grease bundt cake pan.

Whip or beat egg whites to soft peaks and set aside. Mix the cake mix with the greek yogurt and 1 cup of water. Whisk until blended. Fold in the egg whites and set aside. In a separate bowl mash the bananas and then mix in the cranberries.  In prepared bundt pan spoon in the banana/cranberry mix smooth evenly in pan. Next spoon in the batter and spread evenly in the pan. Bake for 30-40 minutes. Remove from oven and invert onto cooling rack. Once cool slice and enjoy.
