If you are ever looking for a new tasty appetizer for the summer, try using the recipe from Dietitian Emily Dupuis for marinated tofu and veggie kabobs!

Tofu is a great substitute for vegans or if you are wanting to try something new and different.

Ingredients:

Tofu

Red peppers

Zucchini

Yellow squash

Marinade:

Olive oil

Red wine

Vinegar

Lemon juice
